Vanilla Bean Honey Syrup

Makes 177 ml (¾ cup)
This syrup is the defining ingredient in the cocktail Sweet Talk, but could also be drizzled over ice cream or toast.
- 100 grams (½ cup) sugar
- 59 ml (¼ cup) honey
- 1 split vanilla bean, or substitute 1 teaspoon vanilla essence (extract)
In a small saucepan combine the sugar, honey, vanilla bean, and 118 ml (½ cup) water. Bring to a boil, stirring until the sugar has dissolved. Remove from heat and allow to cool, then cover and refrigerate.
