For all the electric stovers out there, here’s a ‘truc‘ for lowering the heat quickly. Gotta plan ahead.

If a recipe calls for bringing a pot to a boil then reducing the heat quickly for simmering, you’ll need high heat to start then a quick way to reduce the temperature. So set one burner to high. Set the adjacent burner to medium-low. After the contents of the pot comes to a boil over high, transfer the pot to the ‘medium-low’ burner.
