Storing Mushrooms

Basket of fresh white mushrooms.

When I buy a box of whole mushrooms (most often crimini), I take off the plastic top and refrigerate them uncovered. They won’t retain moisture, sweat, and spoil. Yes, they may dry out a bit before I get to them, but as they dry, their flavors become more concentrated. The mushrooms actually become a little better. This is good for a week or two of storage. Depending on the mushrooms at purchase, the refrigerator, etc., they may last longer.
