Bottling and carbonating maple and birch tree saps seems like the work of genius because these flavors are excellent. I fell in love with SAP! soft drinks in the heat of summer, but my affection has continued into the snows of winter. All three flavors are light yet refreshing and distinctive. Maple Soda is the sweetest, though hardly guilt-inducing with only 18 grams of sugar and 80 calories to a can. Maple Seltzer, flavorful without sweetness, has 9 grams of sugar and 40 calories. I’m equally fond of Birch Sap Sparkling, with 6 grams of sugar and 25 calories.
If this is the beginning of tree-to-table beverages, it’s a great start.

Denise Landis had been employed as an archeologist for seven years before a food editor hired her to test some recipes from a cookbook manuscript. This short stint led to longer assignments, and two years later she began testing recipes for the New York Times. She has been a professional recipe tester and editor for over 25 years, is the author of a New York Times cookbook, and has written for numerous publications. She is a member of the New York Chapter of Les Dames d’ Escoffier.
