The best way to store bacon grease is to strain it through a fine-mesh sieve lined when it is cooled first in a heatproof container, with cheesecloth or a coffee filter to remove any bits of food or salt, then transfer it to a clean, airtight container. Glass jars with tight-fitting lids work well, as do plastic containers with screw-on lids. Make sure to label the container with the date so you know how fresh it is.
Bacon grease will keep in the refrigerator for several weeks. Frozen bacon grease will last longer than fresh bacon grease, use in a few months. Be sure to leave some headspace in the container to allow for expansion. You can also freeze the grease in an ice cube tray and then transfer the frozen cubes to a plastic bag or container for longer-term storage. This makes it easy to measure out small amounts of the grease as needed. To thaw frozen bacon grease, simply place the container in the refrigerator for a few hours or overnight. You can also microwave the container in short bursts until the grease has melted. Just be sure to use a microwave-safe container.
