To make perfect scrambled eggs, follow these steps:
- Crack the eggs into a bowl and beat them lightly with a fork or whisk. Adding a small splash of water as you are beating them will help the eggs steam as they cook, making them fluffy. For creamy eggs, add a small splash of milk or cream.
2. Heat a small non-stick pan over medium heat and add a half-tablespoon of butter.
3. Once the butter has melted, pour in the eggs and allow them to sit until they start to set around the edges, about 30 seconds.
4. Using a silicone or wooden spatula, gently stir the eggs, scraping the bottom and sides of the pan as you go. If you wish, you can also stir in snipped chives, minced herbs, or grated cheese. Continue to cook and stir the eggs until they are fully set but still moist.
5. Remove the pan from the heat and season the eggs with salt and pepper to taste. Serve the scrambled eggs immediately, while they are still hot.
