Ana Ortins gives a contemporary twist on the traditional jesuitas, a puff pastry which mimics the hats worn by Jesuit priests. Inspired by a recent trip to Portugal, Ana adds a chocolate filling and coats the top with meringue, sliced almonds, and an apricot glaze.
