Traditional Pancakes with a Cricket Twist
Everybody loves pancakes, especially when doused with warm maple syrup and topped with fresh, plump berries. But these pancakes will make you even happier because they are super healthy for you thanks to the cricket powder. Protein, B12, calcium, iron, and fiber are just a few of the great nutrients that you’ll get when you eat these goodies!
Ingredients
- 180 grams (1½ cups) all-purpose flour
- 40 grams (¼ cup) cricket powder
- 17.5 ml (3½ teaspoons) baking powder
- 2.5 ml (½ teaspoon) salt
- 15 ml (1 tablespoon) brown sugar
- 296 ml (1¼ cups) milk
- 1 egg
- 45 ml (3 tablespoons) melted unsalted butter
- Icing (confectioners') sugar, optional
- Fresh berries, optional
Preparation
1. In a large bowl, combine all the dry ingredients until they are mixed well. Make a valley in the center of the bowl for the milk, egg and melted butter; mix well until batter is smooth.
2. On medium-high heat, warm your frying pan or griddle, lightly oiled or buttered. Use a 59 ml (¼ cup) measuring scoop to pour the batter into the pan or griddle. When lightly browned, flip. Serve immediately once both sides are lightly browned to perfection.
3. If desired, lightly dust with icing (confectioners’) sugar or top with fresh berries and/or maple syrup.
