Ingredients
- •60 ml (1/4 cup) coriander seeds
- •30 ml (2 tablespoons) cumin seeds
- •15 ml (1 tablespoon) black peppercorns
- •15 ml (1 tablespoon) fennel seeds
- •15 ml (1 tablespoon) whole cloves
- •15 ml (1 tablespoon) green cardamom pods
- •2 black cardamom pods
- •3-5 dried red chilis
- •15 ml (1 tablespoon) turmeric powder
- •15 ml (1 tablespoon) ground ginger
- •10 ml (2 teaspoons) ground cinnamon
Preparation
- In a dry skillet over medium heat, combine the cumin, coriander, black peppercorns, fennel seeds, cloves, green cardamom, black cardamom, and chilis. Stir constantly until fragrant, 2-3 minutes, being careful not to burn the spices. Transfer the roasted spices to a plate and allow to cool completely.
Using a spice grinder, blender, or mortar and pestle, grind the roasted spices into a fine powder.
Add the turmeric, ground ginger, and ground cinnamon to the mix. Blend once more to ensure everything is evenly distributed. Transfer to an airtight container and store at room temperature.
