These luscious Lemon Cookies perfectly balance a crisp exterior and a soft, tender center. The fresh lemon flavor shines through every bite, making them a refreshing treat for any occasion. These cookies are just that irresistible. Black sesame seeds make a lovely contrast.

Ingredients
120 grams (1 cup) all-purpose flour
60 ml (1/4 cup) corn flour
1/4 teaspoons salt
115 grams (1/2 cup) butter
60 ml + 2 tablespoons (1/4 cup + 2 tablespoon) confectioners sugar
1 1/2 tablespoon lemon juice
1 tablespoon finely grated lemon rind
Black sesame seeds, for garnish (optional)
Preparation
Preheat oven to 160°C (320°F). In a mixing bowl, combine the all-purpose flour, corn flour and salt. In a separate bowl, cream together the butter and sugar, then add lemon juice and lemon rind.
2. Gradually add the flour mixture to the butter mixture until it forms into soft dough. Pinch dough and shape into small balls, or roll out dough .6 cm (1/4 inch) thick and cut out shapes using a cookie cutter. Place onto baking sheet. If desired, put a small sprinkle of sesame seeds in the center of each cookie.
3. Bake cookies until lightly browned, 30-35 minutes. Transfer to a rack to cool. Store the cookies in an airtight jar for up to 1 week or freeze for up to 1 month.
