Gouda, Chutney, and Apple Bites
Gouda, Chutney and Apple Bites is a simple appetizer that can be served with a fall menu as suggested in my cookbook, “Diner for Eight”, or as an easy snack any time of year. The name of this recipe says it all. It’s a delicious combination that takes just a few minutes to prepare. The name Gouda is properly pronounced “haw-da” after the town where it is made in the Netherlands. The exterior of Smoked Gouda often has a darker, sometimes almost brownish color, distinguishing it visually from its non-smoked counterparts. Chutney can be homemade or purchased in specialty or grocery stores.
Ingredients
- 3 large, seasonal, fresh eating apples, such as McIntosh, Cortland, Yellow Delicious, and Granny Smith
- About 4 ounces smoked Gouda cheese
- About ½ cup mild or hot chutney
Preparation
1. Halve the apples, core them, and cut them into slices about 1/-1 inch thick. Thinly slice the Gouda into pieces about the same size as the apple slices.
2. Spread 1 side of each apple slice with a thin layer of chutney. Top with a slice of Gouda. Arrange on a serving platter.
Wine Pairing
Apple cider, but, if you must, try Beaujolais or Chenin Blanc
