Creamy Avocado Bean Dip

This white bean dip is super easy to whip up and ready to serve in minutes. Keep a can of cannellini beans on hand for those last minute invitations and unexpected visitors. Serve with store-bought chips or crackers, or make your own from sourdough discard. No crackers? Crudité– raw veggies — are great for dipping.
Ingredients
- 1 ripe avocado
- One 15-ml can cannellini beans
- Store bought or homemade mayonnaise* or 1/3 cup olive oil
- 2 tablespoons fresh squeezed lemon or lime juice
- Salt and pepper to taste
- Additional herbs to taste

*Black lime and black garlic work well with avocado—or pepper flakes for those who like a bit of heat.
This works without the avocado also.
Add fresh herbs such as cilantro or parsley for garnish.
Preparation
- Rinse and drain can of white beans. Chop avocado and mix with beans. Using an immersion blender or food processor, gradually add enough mayonnaise or olive oil with up to 2 tablespoons of hot water to create a smooth and creamy consistency.
2. Add lemon juice, herbs, spices, salt and pepper to taste. Taste as you go — that’s the fun of making an impromptu, improvised dip.
