Aioli is a versatile condiment popular in Mediterranean cuisine. The sauce made from garlic (a lot of it) and olive oil and salt. It is similar to mayonnaise, but that is typically made with canola oil and egg yolks.
It is a good dipping sauce for seafood, french fries and vegetables such as steamed artichokes. Aioli makes a terrific spread on sandwiches. It can also be used as a base for other sauces or as a marinade for meats. Homemade aioli can be stored in an airtight container for a week in the refrigerator.
